Bahan Garlic Focaccia (Sourdough)

  1. Dibutuhkan 85 gr of active sourdough.
  2. Dibutuhkan 248 gr of terigu pro tinggi.
  3. Dibutuhkan 130-140 gr of air.
  4. Dibutuhkan 1 sdt of himalaya salt.
  5. Sediakan 1/2 sdm of madu.
  6. Diperlukan 1/2 sdm of olive oil.
  7. Diperlukan of Topping :.
  8. Sediakan 1 siung of bawang putih cincang halus.
  9. Sediakan 1 sdt of oregano.
  10. Siapkan 3 sdm of butter cairkan.
  11. Gunakan secukupnya of Olive oil.

Langkah-langkah membuat Garlic Focaccia (Sourdough)

  1. Campur semua adonan dengan spatula sampai rata. Uleni kurleb 5 menit..jika lengket basahi tangan dengan dicelup air. Bulatkan adonan, tutup dengan plastik dan proofing selama 3-4 jam di suhu ruang..
  2. Adonan akan mengembang dan timbul sedikit gelembung2 udara di permukaannya. Lakukan stretch and fold di ke-4 sisinya, diamkan 30 menit. Lalu ulangi stretch and fold 1 kali dengan jeda 30 menit. Atau bisa juga 3x stretch and fold sengan jeda 20 menit. Tutup lagi adonan. Diamkan1-2 jam. Adonan akan mengembang 2x lipat, lebih banyak lagi gelembung udara dan glossy permukaaannya. Note : Jika adonan akan diinapkan di kulkas maka cukup didiamkan 1 jam setelah strech and fold baru masuk kulkas semalam.
  3. Oles loyang 20x20 dengan olive oil/margarin. Tuang adonan. Pijat halus tepi2 adonan sambil diratakan sekeliling loyang. Diamkam 30 menit sampai 1 jam. Tuang dan ratakan olive oil di permukaan. Tusuk dengan jari permukaannya secara acak. Tuang campuran bawang+butter+oregano.
  4. Panggang di oven yang telah dipanaskam 15 menit sebelumnya. Saya pakai oven listrik suhu 220⁰ C api atas bawah selama 25 menit, 200⁰ selama 20 menit. Sesuaikan oven masing2. Potong2 dan sajikan..voila lihat crumb/rongganyaaa(gb 2)😍. Note : saya sdh coba dengan terigu pro sedang seperti gbr ke 3. Dan adonan diinapkan 10 jam. Atasnya dioles bolognese dan keju setelah menit 25. Enak juga seperti pizza tapi berongga adonannya..my kiddos love it..
